Thanksgiving is ONE WEEK away! 

We hope you enjoyed last week’s Thanksgiving Delight’s post featuring For You: What to Wear; For Your Table: Sprucing it Up; and For Your Sanity: Wine!

This week, we want to share some of our favorite recipes with you to make your Thanksgiving FUN & FRESH. Look, we all know that Grandma’s sweet potatoes can’t be beat and Mom’s cornbread dressing is out of this world. So we aren’t going to mess with your traditional staples. We want to share a new appetizer, dinner roll, pie and cocktail recipe that you will love, and may just become your next family tradition!


Cranberry Salsa with Goat Cheese

Holiday Cranberry Salsa

Chef Simon from The Coop Cafe created this AMAZING cranberry salsa on WBIR on November 18th. It’s a fabulous appetizer that is beautiful and SUPER easy to whip up. Here is a link to the video (having the play-by-play is wonderful).


1 (12oz) bag of cranberries (chopped in the food processor)

1/4 cup of sugar

1 teaspoon of salt

1 jalapeno (seeded) and diced (optional)

1 Tablespoon of fresh ginger

1/2 of large orange zest

fresh basil (to taste)

lemon juice (to taste)

1 goat cheese log (or any other soft cheese – brie cheese would work well)

crackers (for serving)


Pulse the cranberries in the food processor. Add all the other ingredients and mix.  The salsa can be made up to 2 days in advance.

When ready to serve, pour cranberry salsa over goat cheese and serve with crackers.

Walnut Potato Rolls with Honey Butter

One of our favorite bloggers, Eat, Live, Run, has an AMAZING recipe for Walnut Potato Rolls. They are warm and oh so pillowy. You must have one right out of the oven…it is a little piece of pillowy heaven. They do look like they take some time (to rise, etc) but will totally be worth it and hello, you baked bread! Give it a try! The link to the recipe is here.


Now, if you don’t want to bake bread, you should definitely call VG’s Bakery and order some of their legendary yeast rolls. At only $6 a dozen, they are a steal! You can pick them up Monday, November 25th through Wednesday, November 27th.  Here is a link to their Thanksgiving Ordering Guide. They are located in the Kohl’s shopping center in Farragut.

Pie. Oh the Pie. 

We ADORE pie. The soft buttery crust, the luscious filling, and the fresh whipped cream. YUM! This year you can either make your own pie or pick up one from two of our favorite pie shops: Magpies and VG’s Bakery.

VG’s Bakery has a great selection of cakes, pies and this – for the non-pie lovers out there – the  “Specialty” Pumpkin Pecan Cream Cheese Rolled Cake. “Tender pumpkin pecan cake rolled around our tasty cream cheese filling and dusted with powdered sugar” DELISH!  {1/2 log – $14 (serves up to 6) and Full log – $24 (serves up to 12)}  Here is a link to their Thanksgiving Ordering Guide.

Now, if you want to make your pie, we highly suggest Paula Deen’s Pumpkin Pie Recipe (she adds cream cheese with makes it OUT OF THIS WORLD) and Eat, Live, Run’s Chocolate Bourbon Pecan Pie recipe. {we haven’t made this pie but are trying out this year!}


When surrounded by all our loving {and crazy} family and friends this year, we must start the evening off with a great {and strong} cocktail. This year we are giving the cranberry margarita a whirl!


Easy Peasy Cranberry Margaritas 


{makes 3 cups}

1 1/2 cups cranberry juice cocktail

3/4 cup fresh lime juice

3/4 cup tequila

1/2 cup orange-flavored liqueur, such as Cointreau or Triple Sec

diet sprite

ice cubes

fresh cranberries and lime wedges (for garnish)


Stir cranberry juice, lime juice, tequila, and Triple Sec together until well blended. Serve over ice in sugar- or salt-rimmed glasses, add a splash of diet sprite (for fizz) and garnish with fresh cranberries and lime wedges if desired.
